I'm tempted to say that some sort of PC-to-TUBE interface would be useful, 
then you could emulate whatever [external] second processor you wanted to in 
software[1]. Normally I like messing around with the bare metal (so I'm not 
really an emulator fan), but it's not like the second processors have a lot of 
external interfaces anyway, so a software approach doesn't lose *that* much.

[1] bonus points for stuffing an ultra-compact PC into a cheese-wedge case, of 
course - possibly with a little LCD readout in the label area which says what 
type of 2uP it's currently emulating ;-)
